Tomato Onion Soup 蕃茄洋蔥湯

Hot soup soothes the cold!

Ingredients | 材料 :

  • Yield: 4 servings | 4人份

300g  Chopped tomato, peel first | 蕃茄去皮, 切粒
100g  Chopped onion | 洋蔥, 切碎
10g  Caster sugar | 砂糖
3g  Salt | 鹽
40g  Tomato paste | 茄膏(茄汁都可以)
4 cups Hot water (approx 1 litre) | 4 量杯熱水 (約1公升)
1/2 tsp Chopped garlic | 蒜茸半茶匙
little black pepper |黑胡椒少許
little Oregano | Oregano 香草少許

Steps | 做法 :

  • 炒香洋蔥及蒜茸,加入蕃茄粒,Oregano香草,煮片刻,再加入黑胡椒碎,茄膏,鹽及糖,煮至粘稠(收水),再加上4量杯熱水,煮開食用。
  • Pan fry chopped onion and garlic until smell of garlic, fold in chopped tomato and oregano, cook for a while. Fold in black pepper, tomato paste, salt and sugar till thick. Add 1 litre hot water, let boil and serve.

Tips / 心得 :

  • 平時我會一次做兩份,放在雪櫃,粘稠蕃茄洋蔥湯糊可以放3~4天,注入熱水煮開,便可食用。
  • I always prepare double quantity at a time. The tomato onion paste can be stored in the fridge for 3~4 days and could easily be used for soup when boiled in hot water.
