  • 1 portion fillings (about 470g) | 1份饀料

440g  Cooked red bean | 熟紅豆 (Steps | 做法)
20g  Unsalted butter | 無鹽牛油
30g  Brown sugar | 黃糖
1 tablespoon Maltose | 麥芽糖 1湯匙

  1. Turn to high heat, put about 440g cooked red bean in a large skillet, stir constantly.
  2. When it is hot enough, smashed the beans until flattened and become paste, make sure it is slightly wet.  Turn to medium-low heat, add brown sugar, mix until dissolved.
  3. Add maltose, slightly mix.
  4. Add butter, mix well.
  5. Let cool for use.
  6. Divide into portions, say around 120g per pack. Keep in fridge for one week and freezer up to one month. Best to consume sooner than later.

25g  Custard powder | 吉士粉
10g  Plain flour | 普通麵粉
50g  Egg (1 pc) | 雞蛋(1只)

250g  Milk | 鮮奶
50g  Sugar | 糖
10g  Unsalted butter | 無鹽牛油

  • 混合(A),攪勻。把(B)煮沸。將(A)慢慢加入(B)並攪勻煮熟,冷卻備用。
  • Mix (A), stir well. Bring (B) to a boil, add in (A) gradually and stir well until cooked. Let it cool for use.

Tomato sauce topping 茄醬

Great sauce topping for pizzas!!

  • Yield: 1 portion of Tomato sauce topping | 1份茄醬

300g  Chopped tomato, peel first | 蕃茄去皮, 切粒
100g  Chopped onion | 洋蔥, 切碎
5g  Brown sugar | 黃糖
3g  Salt | 鹽
40g  Tomato paste | 茄膏(茄汁都可以)
1 tablespoon Olive oil | 檻欖油 1湯匙
1/2 teaspoon Chopped garlic | 蒜茸半茶匙
little black pepper |黑胡椒少許
little Oregano | Oregano 香草少許

  • 煎鍋下1湯匙檻欖油,中火炒香洋蔥至軟身(約10分鐘),加入蒜茸及Oregano香草,炒30秒,加蕃茄粒及茄膏,蓋上,轉小火煮至粘稠(約15~20分鐘),加入糖、鹽及黑胡椒碎。待涼備用。
  • In a large saucepan over medium heat, heat 1 tablespoon olive oil and add onion, saute until soft, about 10 minutes. Add garlic and dried Oregano and saute another 30 seconds. Add chopped tomatoes, cover, reduce heat to low, simmer 15~20 minutes. Add sugar, sale and dark pepper. Leave cool for use.

Ingredients | 材料 :

  • 1 portion Mexican bread topping | 1份墨西哥油
    (good for 8 bread tops | 可做8個麵包)

35g  Cake flour | 低根麵粉
35g  Unsalted butter | 無鹽牛油 (室溫)
30g  Icing sugar | 糖霜
25g  Egg | 雞蛋

Steps | 做法 :

  • 牛油和糖霜攪拌均勻,分次加入全蛋拌勻,再加入已過篩的低根麵粉拌勻。
  • Mix butter and icing sugar well, add egg mixture in portions. Add sifted cake flour, mix well.

8g  Whipping cream  | 淡忌廉
16g  Milk | 鮮奶
16g  Hot water | 熱水
20g  Dark or Brown Sugar | 黑糖或黃糖
5g  Unsalted butter | 無鹽牛油
tiny little salt | 小許鹽

  • Ideally mix sugar with the hot water and hot sweet potato first, then mix well with the rest. Let cool, set aside for use.
  • 蕃薯熱的時候加糖最好,愛甜的可另加10g糖,再加入其他材料拌勻,放涼,備用。

90g  Desiccated coconut | 椰絲
30g  Fine granulated sugar | 上白糖或細砂糖(太古純正糖粉)
30g  Unsalted butter, room temperature | 無鹽牛油 (室溫)
27g  Egg | 雞蛋

  • 以上材料可以做到 170~180g 椰蓉餡料
  • above can make 170~180g coconut filling

  1. 用橡膠刮刀將牛油攪拌至軟棉,加入糖充分拌勻。
  2. 分次加入蛋液,充分拌勻。
  3. 加入椰絲,拌勻。
  4. 略分需要餡料等份,備用。

250g  Steamed chestnut |  栗子蒸好
8g  Whipping cream | 淡忌廉
16g  Milk | 鮮奶
20g  Dark or Raw Sugar | 黑糖或原糖

  • Ideally mix sugar with hot chestnut first, then mix well with the rest. Let cool.
  • 栗子蒸熟後加糖,再加入其他材料拌勻,放涼,備用。

1/4 teaspoon  Fine salt | 幼鹽1/4茶匙
1/2~1 teaspoon Mixed herbs | 什香草 半匙~1匙
little Quick oats | 快熟麥片小許

  • 牛油和鹽先混合,加入磨碎蒜蓉和其他材料,拌勻,放入密氣容器放雪櫃備用。
  • Mix salt and butter well, add blended garlic and remaining ingredients, mix well. Transfer this paste into an airtight container and store in the refrigerator.

220g  Cooked or steamed taro | 1/2磅芋頭蒸好
12g  Milk | 鮮奶
10g  Hot water | 熱水
20g  Brown sugar | 黃糖
2g  Soft butter | 軟牛油
tiny little salt | 小許鹽

Steps | 做法 :

  • 將黃糖先溶於熱水, 再加入上面材料混合,放涼,備用。
  • Dissolve brown sugar in hot water.  Mix all above well, let cool and ready for use.
