Pizza 薄餅

Pizza you can bake at home!

Ingredients | 材料 :

  • Yield: Two 7″ pizzas | 2個7吋薄餅

100g  Bread flour | 高根麵粉
100g  Cake flour | 低根麵粉
3g  Salt | 鹽
3g  Caster sugar | 砂糖
5g  Olive oil | 橄欖油
4g  Yeast | 酵母 (依士)
125g  Warm water | 溫水

(B) Topping | 面料 :
ham (optional), mushrooms, green pepper, chopped red chilli (for hot lovers), last to put on shredded mozzarella cheese

(C) Tomato sauce | 茄醬 (Steps | 做法)

Steps | 做法 :

  1. 基本麵糰搓揉及第一次發酵方法,參照基本麵糰製作
  2. 將發酵完成的麵糰分成2個等份,鬆弛10分鐘。
  3. 拍成7吋圓形,塗上茄醬,蓋上保鮮紙進行最後發酵(約30分鐘)。
  4. 放上薄餅配料,最後放芝士碎。
  5. 放入已預熱至230°C的焗爐內或家用多士焗爐,烘焗約15~20分鐘取出。

  1. Basic dough kneading and first fermentation, Refer Basic Dough.
  2. Divide the fermented dough into 2 portions, let rest for 10 minutes. 
  3. Roll the dough into a 7″ diameter round shape, put on tomato sauce. Place them on a baking tray with baking parchment, cover it with plastic wrap, for final fermentation (around 30 minutes).
  4. Put on toppings, last to put on cheese.
  5. Bake in 230°C preheated oven for about 15~20 minutes. Remove from oven.

Tips / 心得 :

  • 試用1000Watt 多士焗爐焗一個7吋薄餅15分鐘,香脆可口!
  • I have also tried this out in a 1000W toaster for a 7″ pizza. Super crispy!!
